Spinach Cheese Quiche - cooking recipe

1 pie crust 8 oz. Swiss cheese
1 package chopped spinach 3 large eggs
8 oz. heavy cream 1 teaspoon salt
3 Tablespoons flour 1/4 teaspoon nutmeg
1/4 teaspoon pepper
Preparation

Prick pie crust, bake at 425\u00b0 for 5 minutes. Cool slightly. Mix cream, flour, eggs, spice together. Layer spinach and cheese in crust; pour in cream mixture and bake at 350\u00b0 for 1 hour. Let stand a few minutes and serve. It's great hot, cold, or room temperature. If you want you can add some crumbled bacon. (Mrs. Smith and Pet Ritz make an excellent ready-made pie crust.)
