Sarah'S Hot Weather Summer Salad - cooking recipe

Ingredients
    1 head romaine
    1 head boston lettuce
    1 ripe mango
    2 oranges
    1 avocado
    1 lime
    2 tbsp extra virgin olive oil
    2 tsp balsamic vinager
    salt/pepper (optional)
Preparation
    Wash and dry lettuce. Place in a large salad bowl.
    Clean mango by peeling with a potato peeler and then slicing the fruit from around the hard core. Cut into medium size slices or chunks. Add to lettuce.
    Remove the zest from one orange and add to the lettuce.
    Peel both oranges (with a knife)and segment them, add to lettuce. Reserve any remaining juice from the orange peels and the pulp in a seperate bowl.
    Just prior to serving, clean the avocado and cut into small chunks add to the salad.
    Add the reserved orange juice to the salad along with the juice of 1/4 lime (add more to taste).
    Add the olive oil, not much is needed as the avocado gives a hearty base to the dressing.
    Add one to two teaspoons of high quality balsamic vinager (some vinagers are much more acidic than others and the lime provides some acidity as well, add vinager slowly, toss, and taste before adding the full amount).
    Salt and pepper to taste and toss the salad well to incorporate all ingredients and to crush the avocado slightly.
