Cold Baked Fish - cooking recipe

Ingredients
    Whole grouper 5 lbs (haddock also suitable)
    White pepper
    Salt
    Old Bay seafood seasoning
    Lemons
    Tarragon
    Garlic cloves 2-3 sliced
    Scallions 5-6 chopped
    White table wine-1 cup
    Cream cheese
    Parsley
Preparation
    Scale and gut fish- keep head on
    Clean fish thoroughly under
    cold running water
    Rub inside and ouside with cut
    lemon
    Sprinkle inside and ouside with
    salt, pepper and small
    amount of Old Bay
    Place chopped scallions, sliced
    garlic, Tarragon in cavity
    Sprinkle with white wine
    Wrap in 4-5 layers of foil and
    place on cookie sheet
    Bake in preheated 350o oven for 1 hour, check at 45 min.
    Cool thoroughly
    Decorate with layer of cream cheese and thinly sliced lemons (scales)
    Chill for 1 hour or more
    Serve whole on bed of greens
