Spicy Grilled Eggplant And Shrimp With Warm Honey - cooking recipe

Ingredients
    Grilled Eggplant
    1 \t\tLarge Eggplant
    1/4 \t\tcup olive oil
    1 \t\tlarge lime
    2 Tbsp Cajun Blackening Seasoning
    Grilled Shrimp
    1 pound\tlarge peeled and veined shrimp
    2 tbsp olive oil
    1/2 tsp kosher salt
    Freshly ground black pepper, to taste
    Warm Honey Mustard Dressing
    1/3 cup olive oil
    2 tbsp \t\twhite wine vinegar
    1 tsp balsamic vinegar
    1 egg yolk
    1 tbsp honey
    2 tsp prepared yellow mustard
    1 tsp pesto
    1/4 tsp kosher salt
    Freshly ground black pepper, to taste
Preparation
    Grilled Eggplant
    Slice eggplant into 1/2 inch thick round slices. Drizzle olive oil and squeeze lime over eggplant and let sit several minutes until juice is absorbed. Sprinkle spices over slices covering thoroughly. Grill 5-8 minutes on each side until slightly charred.

    Grilled Shrimp
    Toss shrimp with all of the above ingredients. Grill the shrimp for 3 minutes. Turn and cook on the other side for 3 minutes, or until done.

    Warm Honey Mustard Dressing
    Add all ingredients in a small metal bowl and whisk until thoroughly incorporated. Place over a pan of simmering water and continue whisking until warmed and thickened.
