Quick Red, White And Green Dinner - cooking recipe
Ingredients

1/2 large sweet onion
2 garlic cloves
14.5 ounces canned diced tomatoes (no salt added)
1/2 teaspoon dried oregano
1.5 cups cannellini beans
5 ounces frozen cut leaf spinach
2-3 teaspoons red wine vinegar
2 teaspoons MatoZest
Preparation

1. Chop the onion and mince the garlic. Water saute the onions and garlic for 5-7 minutes in a large frying pan over medium heat. (Start with 2 T of water and add more water as needed.)
2. Add the tomatoes and oregano to the pan and reduce heat to medium-low.
3. If using canned beans, use 1 can and rinse and drain them well. (I cook dry beans in large batches and keep them in my freezer in 1.5 cup servings for convenience.) Add the beans to the pan.
4. Add frozen chopped leaf spinach. Drizzle with vinegar and stir in the MatoZest. Cook just long enough for the spinach to be done and serve.

This is a quick dinner to throw together on nights when you don't have a lot of time to cook. It's good as-is or can be served over brown rice if desired.
