1 8oz bag Trader Joe's slivered blanched almonds
1/2 cup granulated sugar
1 cup confectioners' sugar
2 XLRG egg whites, lightly beaten
1/2 cup pine nuts
pinch salt
Preparation

Heat oven to 300\u00b0. Combine almonds and granulated sugar in a food processor, and process until very finely ground, about 4 minutes. Add confectioners' sugar and egg whites, and salt, process until a smooth dough forms. Transfer dough to a piping bag fitted with a 1/2\" round tip, and pipe 11/2\" mounds, spaced 2\" apart, on parchment paper-lined baking sheets. Or drop by small ice-cream scoop into little mounds. Gently press about 10-12 pine nuts on the top of each mound so they adhere. Bake cookies, rotating baking sheets top to bottom and front to back halfway through cooking, until golden brown, about 20-25 minutes. Let cool completely before serving.
