Scallion Pancake (Cong You Bing) - cooking recipe

Ingredients
    4 cups flour, plus more
    1 T baking powder
    1 T kosher salt
    1/2 c. canola oil
    2 T toasted sesame oil
    1 1/2 c thinly sliced scallions
    1 t crushed red chile flakes
    1/2 t ground white pepper
Preparation
    Process 2c flour, baking powder in food processor. With motor running, add 2/3 c cold water; process until dough forms (40sec), transfer to plate and set aside. Add remaining flour, salt to processor. With motor running, add 2/3c boiling water; process until dough forms (30sec). Return dough to processor, pulse until both doughs come together (35sec). Transfer to lightly floured work surface, knead until smooth (4 min). Place in greased bowl, cover, and let sit at room temp 2 hrs.

    Halve dough. Using rolling pin, roll dough half to 10\"x20\" rectangle, brush with 1 T canola oil and half of sesame oil. Sprinkle w; half each of scallions, chile flakes, and white pepper. From long side, roll dough tightly, like jelly roll. Cut roll crosswise into 3 pieces, slightly stretch each piece, and starting from one edge, coil it horizontally, tucking end underneath. Using hand, gently flatten coil into a disk; using rolling pin, flatten into 5\" circle. Repeat with remaining dough pieces and second dough half, oils, scallions, pepper, and flakes. Let pancakes rest 10 minutes.

    Heat oven to 200F. Heat 2tsp canola in 10\" nonstick skillet over medium. Add 1 pancake, cook, swirling skillet and turning once, until golden and crisp, about 10 min. Transfer to baking sheet; place in oven to keep warm, and repeat with remaining oil and pancakes. Cut into wedges to serve.
