Chicken With Cheese Sauce - cooking recipe

Ingredients
    4 Skinless, Boneless Chicken Breasts
    Salt and pepper
    1 cup Flour
    1 Egg mixed with teaspoon of water
    1 sleeve of saltine crackers, crushed
    oil
    2-3 T Butter
    1/4 onion, minced
    2T Flour
    1 to 2 cups cheese
    1 pint half and half (may not need the whole carton)
    Cayenne Pepper to taste
Preparation
    Rinse chicken and pat dry. Season with salt and pepper, both sides. Heat enough oil to coat bottom of skillet until hot on medium high. Heat oven to 350. Coat chicken with flour, dip in egg wash then in cracker crumbs. Cook on both sides until brown but not done in the middle. Transfer to an ovenproof skillet or pan. Bake for 15 minutes or until done. Meanwhile, melt butter in small saucepan and saute onions until transluscent. Add 2 tablespoons of flour about 2-3 mins or until cooked. Add half and half until smooth. Will thicken some, then add the cheese small amounts at a time until all is melted. May have to add more half and half if it gets too thick. Add Cayenne to taste. Serve Chicken with sauce poured on the top.
