Grilled Cilantro Chicken - cooking recipe
Ingredients

1 lb. slicing tomatoes, quartered
2 serrano chilis
1/2 c thinly sliced green onions& distilled white vinegar
2 1/2 T brown sugar
1 T minced garlic
2 t each mustard seeds,ground cumin, cracked pepper
1 t cayenna
1/2 t tumeric
1./2 cu olive oil
2 avocados in 3/4 chunks
1/4 each olive oil& lime juice
1/2 c chopped cilantro
1T cumin
4 chicken breasts skinned and boned (or more)
Preparation

make salsa: combine tomatoes, chillis and green onions in bowl. Hear vinegar. Add sugar and salt and cook to dissolve sugar. Pour into bowl. Heat olive oil, add ginger, garlic, and dry apices and cook until fragrant. Remove from heat and add vinegar, salt and pepper. Pour over tomatoes and stir in avocadoes. Let cool at least an hour or chill. Combine lime juice, olive oil cilantro cumin ssalt and pepper. Pour over chicken and let stand for 30 min. either grill or bake for about 45 min. Transfer chicken to plates and spoon salsa over, saving about half the liquid for another use such as salad dressing.
