Duck And Chili Spring Rolls - cooking recipe
Ingredients

1 1/4 cups sugar
1/2 cup white vinegar
12 None large red chilies, deseeded, 10 finely chopped, 2 sliced
1/2 tsp sea salt
1 None Chinese crispy duck, meat shredded
1 tbsp hoisin sauce
16 None spring roll wrappers
3.5 oz bean sprouts
2 None cucumbers, cut into sticks
1/2 cup cilantro
2/3 cup Thai basil
1/2 cup peanuts, crushed

To make sweet chili sauce: Place the sugar, vinegar and 1/2 cup water into a small saucepan and stir over medium heat until the sugar has dissolved. Add the finely chopped chilies and simmer for 15 mins. Stir in the salt. Remove pan from heat and leave to cool.
Place the duck meat and hoisin sauce into a bowl and mix to combine.
Place a spring roll wrapper in a bowl of warm water and leave for 20 seconds, or until softened. Remove and lay on a clean work surface.
Place some bean sprouts, cucumber, duck, sliced chilies, herbs and peanuts on the middle of the top half of the wrapper. Roll over to enclose the filling. Fold up the bottom of the wrapper and continue to roll firmly to seal.
Repeat this process with the remaining wrappers and ingredients. Serve with a dipping bowl of the sweet chili sauce.
