Turkey And Fava Bean Penne - cooking recipe

Ingredients
    1 pkg (16 oz) frozen fava beans
    13 oz penne
    1 tbsp extra virgin olive oil
    1/2 small onion, finely chopped
    9 oz cooked lean turkey, cut into strips
    1/2 cup chicken stock
    2 tbsp shaved Parmesan cheese
    None None Chopped parsley, to serve
Preparation
    Place fava beans in a bowl and cover with boiling water. Let stand for 10 mins. Drain, refresh in cold water and drain again. Remove and discard white skins.
    Meanwhile, cook penne in a large saucepan of boiling salted water according to package directions. Drain, reserving 1/2 cup cooking liquid.
    Heat oil in a large skillet on medium heat. Cook onion for 3 mins, stirring, until soft. Add fava beans, turkey and chicken stock and simmer for 5 mins. Add penne and toss on low heat, adding reserved cooking liquid, if necessary. Serve topped with Parmesan cheese, parsley and a grinding of black pepper.
