Spicy Asian Lettuce Snacks With Chicken - cooking recipe
Ingredients

1 tbsp peanut oil
2 clove garlic, crushed
3 None small pieces ginger, grated
1 lb ground chicken
1/3 cup tomato sauce
1/3 cup oyster sauce
1/2 cup chopped bamboo shoots
1/2 cup chopped, drained water chestnuts
1/2 cup cilantro, roughly chopped, plus extra to serve
1 None long red chili pepper, deseeded and finely sliced, to serve
None None lime wedges, to serve (optional)
Preparation

Heat peanut oil in wok or large frying pan, on high. Stir-fry garlic and ginger for 1 min, or until fragrant. Add chicken and stir-fry 3-5 mins, until browned, breaking up lumps with a wooden spoon. Stir in sauces, bamboo shoots and water chestnuts, then remove from heat. Stir in chopped cilantro, then spoon mixture onto lettuce leaves. Arrange on a plate and top with chili pepper and extra cilantro, to serve. Accompany with lime wedges, if using.
