Oven-Baked Lamb Sausages, Beans And Tomatoes - cooking recipe

Ingredients
    1 1/2 lbs thick lamb sausages or Italian sausages
    2 medium zucchini, coarsely chopped
    1 medium red pepper, seeded and coarsely chopped
    1 can (15 oz) diced tomatoes
    1 can (15 oz) cannellini beans, drained and rinsed
    1/4 cup loosely packed basil leaves
Preparation
    Preheat the oven to 400\u00b0F. Cook the lamb sausages in a large oven proof skillet on medium heat until browned all over. Add the zucchini, pepper and tomatoes. Cover.
    Bake for 40 mins or until the sausages are cooked through. Add the beans and bake for 10 mins or until the beans are heated through. Remove the skillet from the oven and slice the sausages thickly. Return to the skillet and stir briefly. Serve the sausage stew topped with fresh basil leaves.
