Chicken And Avocado Nori Rolls - cooking recipe

Ingredients
    14 oz sushi rice, rinsed, drained
    2 tbsp sushi seasoning
    8 sheets nori
    1 None avocado, peeled, halved, pitted, thinly sliced lengthwise
    5 oz shredded cooked chicken
    None None soy sauce, to serve
Preparation
    Place rice in a medium heavy-bottomed saucepan along with 3 cups water. Bring to a boil, stirring. Reduce heat and simmer, covered, for 12 mins, or until water is absorbed. Remove from heat and let stand, covered, for 5 mins. Transfer to a baking dish and drizzle with sushi seasoning. Stir to combine. Cover with a damp tea towel and let cool.
    For each roll, place a sheet of nori on a flat work surface. Using a wet spoon, spread rice over sheet, leaving a 3/4 inch border. Top with avocado and chicken. Roll up tightly to enclose filling. Cover with plastic wrap and chill for 15 mins. Serve with soy sauce.
