Ingredients

1 cup all-purpose flour
1 cup rye flour
3 tsp sea salt
7 tbsp cold butter
3/4 cup plus 2 tbsp lowfat milk
3 tbsp brown sugar
1 oz pistachios, finely chopped
1 oz poppy seeds
7 oz goat cheese or cream cheese
Preparation

In a bowl, mix the flours and 1 tsp salt. Add the butter in small pieces and blend. Add the milk and knead into a smooth dough. Add 1-2 tbsp water if the dough is too dry.
Preheat the oven to 375\u00b0F. Divide the dough into 4 pieces and roll each piece out very thinly. Cut 40 4 inch circles out of the dough, then a 1 inch circle out of the middle of each circle. Re-roll any leftover dough and repeat until it has all been used.
Transfer the circles to lined baking trays, prick several times with a fork, brush with water and sprinkle half with brown sugar and pistachios and half with poppy seeds and sea salt. Bake for 6-8 minutes then cool on a wire rack. Serve with goat cheese or cream cheese.
