3/4 cup pitted dates, coarsely chopped
1/2 tsp baking soda
3 tbps butter, softened
1/2 cup light brown sugar
1 None egg
1/2 cup self-rising flour
1/4 cup all-purpose flour
None None whipped cream, to serve
None None strawberries, to serve, if desired
None None Butterscotch Sauce
3/4 cup heavy cream
3 1/2 tbsp butter
Preparation

Preheat oven to 350\u00b0F. Grease 4 - 5 oz ramekins. Combine dates with 1/2 cup boiling water. Stir in baking soda then set aside for 10 mins.
Meanwhile, cream butter and sugar until light and fluffy. Add egg, beating well. Fold in sifted flours and date mixture. Transfer to prepared ramekins and bake for 20-25 mins, until a skewer inserted in the center comes out clean.
For the butterscotch sauce, combine cream and butter in a small saucepan. Stir over low heat until sugar dissolves. Bring to a boil, reduce heat and simmer for 1-2 mins, until thickened slightly.
Serve puddings warm, drizzled with sauce. Accompany with heavy cream and strawberries, if desired.
