Mixed Nut Praline Semifreddo - cooking recipe

1/4 cup chopped cashew nuts
1/4 cup chopped pecans
1/4 cup chopped slivered almonds
1/4 cup chopped macadamias
1 cup sugar

1 1/4 cups heavy cream
3 None eggs, separated
1/3 cup sugar
1 tsp vanilla bean paste
Preparation

Line a baking pan with parchment paper. Sprinkle with nuts.
Place 1 cup water and sugar in a small saucepan on low heat. Stir for 2-3 mins until sugar dissolves. Bring to a boil. Reduce heat to medium-low. Simmer, without stirring, for 8-10 mins until golden brown.
Pour over nuts. Cool. Break half the praline into small pieces. Chop remaining praline finely.
For the semifreddo, beat cream in a medium bowl with an electric mixer until soft peaks form. Beat yolks, sugar and vanilla paste in a small bowl with electric mixer until thick and pale. Transfer mixture to a large bowl. Fold in whipped cream and finely chopped praline.
Beat egg whites in a small, clean bowl with electric mixer until soft peaks form. Lightly fold into cream mixture. Cover with foil and freeze overnight until firm.
Remove semifreddo from freezer 10 mins before serving. Serve topped with remaining broken praline.
