Pasta Salad With Tomato Basil Dressing - cooking recipe

300 g pasta shapes, eg farfalle
2 None shallots, peeled and finely diced
2 None tomatoes, deseeded and chopped
4 tbsp dark balsamic vinegar
4 tbsp olive oil
1 small bunch rocket
1/2 bunch basil, half the leaves cut into strips
150 g sundried tomatoes in oil, drained and halved
50 g parmesan cheese, shaved
Preparation

Cook the pasta in boiling salted water according to package directions. Meanwhile, season the vinegar with salt and pepper adding a pinch of sugar, if desired. Drizzle the olive oil into the vinegar, and mix thoroughly. Add the chopped tomatoes and shallots.
Add the strips of basil to the vinaigrette. Drain the pasta, and rinse in cold water. Mix the vinaigrette with the pasta and the sundried tomatoes, and allow the flavors to infuse for 10 mins.
Check the seasoning. Toss the remaining basil with the arugula leaves and arrange on a plate. Put the pasta salad on top and dress with the shaved Parmesan.
