Dirty Rice With Pork - cooking recipe

Ingredients
    12 oz basmati rice
    1/4 cup extra virgin olive oil
    1/2 lb bacon, chopped
    1 tbsp Cajun spice mix
    1 lb ground pork
    1 None small red onion, peeled and chopped
    2 stalks celery, chopped
    1 None large red pepper, diced
    2 oz pickled jalapeno peppers, chopped
    1 cup chicken stock
    2 None spring onions, sliced finely
Preparation
    Cook rice according to package instructions.
    Meanwhile, add 1 tbsp oil to a large casserole dish or frying pan and cook bacon until crisp. Add Cajun spice mix and pork and continue to cook over medium or high heat until pork is browned. Add remaining oil, red onion, celery, pepper and jalapenos, and continue to cook until the onion is soft. Add the chicken stock and deglaze the pan by scraping the bottom of the pan with a wooden spoon. Simmer until most of the stock has evaporated, then fold into the rice. Sprinkle with spring onions and serve.
