Apple Crumble Muffins - cooking recipe

Ingredients
    6 tbsp reduced-fat margarine
    1/3 cup brown sugar + 1 tbsp
    1 None egg
    1 cup self-rising flour, sifted + 2 tbsp
    1 None large Granny Smith apple, peeled, cored, chopped into small chunks
    1/4 cup skim milk
    2/3 cup rolled oats
    1 tbsp desiccated coconut
    1/2 tsp pumpkin pie spice
    None None heavy cream, to serve
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 6-cup muffin pan with oil.
    Cream margarine and 1/3 cup sugar until light and fluffy. Add egg, beating well. Fold in flour, apple and milk until just combined. Transfer to prepared pan.
    Combine oats, coconut, 1 tbsp sugar and pumpkin pie spice. Sprinkle evenly over muffin batter and bake for 15-20 mins, or until a skewer inserted in the center comes out clean. Let cool for 5 mins in pan. Serve warm, drizzled with heavy cream.
