Mini Quiche Lorraine - cooking recipe

2 sheets frozen puff pastry, thawed and quartered
4 tbsp (1/2 stick butter
1 None onion, thinly sliced
3 slices bacon, chopped
2 None eggs
1/2 cup heavy cream
1/2 cup grated Swiss or Cheddar cheese
None None Basil leaves, to serve
Preparation

Preheat the oven to 400\u00b0F. Lightly grease an 8-loaf mini loaf pan. Line bottom and sides with a strip of parchment paper. Press pastry into each well. Fill each with scrunched foil. Bake for 5-10 mins. Set aside on a wire rack. Reduce oven to 350\u00b0F.
Meanwhile, melt butter in a large skillet on high heat. Saute onion and bacon until onion is soft. Fill each crust evenly with onion mixture. Whisk eggs and cream in a medium bowl and season to taste. Pour into crusts. Sprinkle with cheese.
Bake for 10-15 mins, until set. Sprinkle with basil leaves.
