Lamb And Sweet Potato Curry With Garlic Naan - cooking recipe

Ingredients
    1 tbsp vegetable oil
    1 lb sweet potato peeled, cubed
    1 None green pepper, seeded, chopped
    1 lb ground lamb
    2 oz rogan josh curry paste
    14 oz can diced tomatoes
    None None Garlic Naan
    2 pieces plain naan bread
    2 tbsp butter, melted
    2 cloves garlic, finely chopped
    8 oz plain Greek-style yogurt, to serve
    1 None mini cucumber, sliced into ribbons, to serve
    1 tbsp mint leaves, to serve
Preparation
    For the curry, heat oil in a large saucepan on medium. Cook sweet potato and pepper 3-4 mins, until golden. Transfer to a bowl. Brown lamb in same pan 6-8 mins, breaking up lumps with a spoon. Stir in curry paste and cook, stirring, 1-2 mins, until fragrant. Return sweet potato to pan, along with tomatoes and 1/2 cup water. Simmer 4-5 mins, until sweet potato is tender and sauce thickens.
    Meanwhile, for the garlic naan, brush naan bread with butter and sprinkle with garlic. Broil under a preheated broiler 1-2 mins, until crisp. Cut into wedges. Serve with curry, yogurt, cucumber ribbons and mint.
