Watermelon And Haloumi Salad With Pickled Red Onions - cooking recipe

Ingredients
    -1 None Pickled Red Onions
    1 None small red onion, sliced thinly
    1/4 cup red wine vinegar
    2 tsp sugar
    None None Watermelon and Haloumi Salad with Pickled Red Onions
    6 oz haloumi, sliced thickly
    14 oz watermelon, cut into wedges, rind removed
    3 oz kalamata olives, seeded
    3-4 sprigs fresh mint, leaves picked
Preparation
    For the pickled red onions, place sliced onion in a small heatproof bowl. Bring vinegar and sugar to a boil then pour over onion. Let cool.
    Oil a grill plate and place over medium-high heat. Working in batches, grill cheese until browned.
    Arrange cheese and watermelon on a serving platter and sprinkle with olives and mint. Arrange pickled onions over top. Season to taste.
