Ingredients

1 None egg
1/3 cup granulated sugar
1 cup self-rising flour, sifted + 2 tbsp
3/4 cup skim milk
1/4 tsp baking soda
1 1/2 tbsp reduced-fat butter or margarine, melted
1 None apple, peeled, quartered, thinly sliced
2 tbsp brown sugar
None None fresh raspberries, to serve
None None maple syrup, to serve
Preparation

Preheat oven to 400\u00b0F. Whisk egg and granulated sugar together. Whisk in flour alternately with milk and baking soda until smooth. Stir in butter. Set aside.
For the caramelized apples, combine apple and brown sugar. Bake for 10 mins, until apple is tender.
To make the pancakes, heat a large frying pan over medium heat. Lightly coat with oil. Working in batches, cook small pancakes for 1-2 mins, until bubbles form on surface. Flip and cook for another 1 min. Serve warm, topped with caramelized apple, raspberries and maple syrup.
