Stuffed Sausages With Garlic Mashed Potatoes - cooking recipe

Ingredients
    8 None thick beef sausages
    1/4 cup grainy mustard
    3 oz mozzarella cheese, grated
    1 oz Parmesan cheese, grated
    3 tbsp breadcrumbs
    1 tbsp pitted black olives, chopped
    1 tbsp fresh parsley, chopped
    None None Garlic Mashed Potatoes
    10 None potatoes, peeled, cut into chunks
    1/4 cup milk or heavy cream
    1 tbsp butter
    2 cloves garlic, minced
    None None sauteed red cabbage and apple, to serve
Preparation
    Heat a large frying pan over high heat. Cook sausages for 10-12 mins, turning frequently, until cooked through. Butterfly each sausage and spread mustard over top. Combine cheese, breadcrumbs, olives and parsley and spread over sausages. Sandwich back together and set aside.
    Preheat broiler. Arrange sausages on a foil-lined tray. Broil for 4-5 mins, until sausages are heated through and cheese melts.
    For the garlic mashed potatoes, cook potatoes in boiling salted water for 15-20 mins, until tender. Drain and mash with milk, butter and garlic.
    Serve sausages with garlic mashed potatoes and sauteed cabbage and apple.
