Chicken Quesadillas With Tomato Salad - cooking recipe

Ingredients
    1 tbsp white wine vinegar
    1 tbsp honey
    3 tbsp olive oil
    1 lb tomatoes, sliced
    1/2 None red onion, thinly sliced
    2 tbsp fresh chives, chopped
    3 tbsp vegetable oil
    1 lb chicken breast, cut into bite-sized pieces
    5.25 oz cream cheese
    1 tbsp lime juice
    1/2 tsp mild chili powder
    4 None tortillas
    4 tbsp fresh cilantro, chopped + extra sprigs, to garnish
    3.5 oz Gouda cheese, grated
Preparation
    For tomato salad, whisk vinegar with honey and olive oil and season. Toss with tomatoes, red onion and chives. Set aside.
    Heat 1 tbsp vegetable oil in a frying pan, season chicken and saute for 4-5 mins until cooked through. Meanwhile, beat cream cheese with lime juice and chili. Add chicken and distribute between 2 tortillas, spreading it almost to edges. Add chopped cilantro and cheese. Place remaining tortillas on top.
    Heat 1 tbsp vegetable oil in a frying pan, add 1 quesadilla and cook until crisp and golden on each side. Repeat with remaining quesadilla. Cut into quarters and garnish with cilantro. Serve with tomato salad.
