Stuffed Chicken With Pesto Sauce - cooking recipe

Ingredients
    1 cup fresh breadcrumbs
    1/2 cup grated mozzarella cheese
    1 slice bacon, finely chopped
    1 tbsp olive oil
    1 clove garlic, crushed
    4 None chicken legs, skin on
    2 tbsp butter, melted
    1/3 cup heavy cream
    1/4 cup chicken stock
    2 tbsp pesto
    None None Roast potatoes, to serve
Preparation
    Preheat the oven to 350\u00b0F. Line a baking pan with foil.
    Combine breadcrumbs, cheese, bacon, oil and garlic in a medium bowl; season to taste. Carefully push stuffing under skin of each chicken leg. Refrigerate 30 mins.
    Arrange chicken, skin-side up, in prepared pan. Brush with butter; season to taste.
    Bake 40-45 mins, basting occasionally, until cooked through and golden. Let stand, covered with foil, 5 mins.
    For the sauce, combine cream, stock and pesto in a small saucepan on low heat. Stir until almost boiling; season. Drizzle over chicken. Serve with roast potatoes.
