6 None quince, coarsely chopped
2 tbsp dried rose petals
6 1/2 cups granulated sugar, approximately
Preparation

Combine quince, 8 cups water and rose petals in a large saucepan. Bring to a boil then reduce heat and simmer, covered, for 1 hour, or until pulpy.
Strain mixture through a fine cloth into a large bowl. Let stand for 3 hours, or overnight, until liquid stops dripping. Do not squeeze cloth. Discard pulp.
Measure quince liquid. For every 1 cup of liquid, measure out 1 cup sugar. Return quince liquid and sugar to saucepan and stir over high heat, without boiling, until sugar dissolves. Bring to a boil. Boil rapidly, uncovered, without stirring, for 30 mins, or until jelly jells when tested.
