Tomato And Avocado Salad With Tofu Pesto - cooking recipe

Ingredients
    None None FOR THE TOFU PESTO
    1 3/4 oz firm tofu
    1/2 cup firmly packed fresh basil leaves
    1 tbsp fresh lemon juice
    None None FOR THE SALAD
    1 None tomato, cut into wedges
    1/2 None avocado, thickly sliced
    4 oz firm silken tofu, cut into 1-inch pieces
    1 1/2 cups mesclun (mixed salad leaves)
    1 tbsp fresh basil leaves
    1 tbsp pine nuts, toasted
Preparation
    For the tofu pesto, blend or process the tofu, basil, lemon juice and 1 tbsp water until smooth.
    Combine the remaining ingredients in a medium bowl. Serve salad topped with tofu pesto.
