Caramelized Onion And Spinach Tart - cooking recipe

Ingredients
    1/4 cup olive oil
    3 None red onions, sliced
    2 tbsp brown sugar
    2 tbsp balsamic vinegar
    4 sheets puff pastry
    3.5 oz baby spinach
    3 oz olives
    3 oz sun-dried tomatoes in olive oil, drained and chopped
    3.5 oz feta
    2 tbsp fresh basil
Preparation
    Heat olive oil in a large frying pan on low. Cook onions for 10 mins, until they begin to caramelize.
    Stir in brown sugar and vinegar and cook, stirring, for 5 mins. Allow to cool.
    Preheat oven to 400\u00b0F. Lightly grease 2 baking sheets and line with parchment paper. Place a sheet of pastry on each baking sheet. Fold in 1/2 inch around edges.
    Spread half the onion evenly over each pastry sheet. In a bowl, toss together spinach, olives and tomatoes. Spread half over each pastry. Crumble over feta.
    Bake for 20-25 mins, until golden. Sprinkle with basil, cut in half and serve.
