Pear And Cinnamon Muffins - cooking recipe
Ingredients

1 2/3 cups self-rising flour
1/2 cup all-purpose flour
1 tsp baking soda
2 tsp ground cinnamon
1 None egg, lightly beaten
1 cup soy milk
1/2 cup vegetable oil
1 None pear, cored, finely chopped
2/3 cup brown sugar
3 tsp powdered sugar
Preparation

Preheat oven to 350\u00b0F. Grease a 12-cup muffin pan.
Sift together flour, baking soda and 1 tsp cinnamon. Whisk together egg, soy milk and oil then mix into dry ingredients. Add pear and brown sugar and mix until just combined. Distribute between muffin recesses. Bake for 20 mins, until golden and a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
Combine powdered sugar with remaining cinnamon. Dust warm muffins with cinnamon sugar. Serve warm or at room temperature.
