Granola Pancakes - cooking recipe

Ingredients
    3/4 cup buttermilk
    1 large egg
    1/4 cup sugar
    1 tsp vanilla extract
    3 1/2 tbsp butter, melted
    1 1/4 cups self-rising flour
    1 1/2 cups granola
    None None cooking oil spray
    1 cup vanilla Greek yogurt
    1/2 lb small strawberries, sliced
Preparation
    For the batter, whisk the buttermilk, egg, sugar, vanilla and butter in a large bowl. Add the flour and granola and stir until just combined. Set aside 5 mins to rest.
    Spray a large non-stick frying pan lightly with cooking spray and heat over medium. Spoon tablespoons of the batter into the pan and cook in batches 1-2 mins on each side or until golden. Serve warm with the yogurt and strawberries.
