Lime And Peach Semifreddo - cooking recipe
Ingredients

4 None ripe peaches, peeled, pitted
1 None lime, zested and juiced, lime halves reserved
2 None eggs, separated, plus 2 egg yolks
3/4 cup granulated sugar
2 cups heavy cream
1 tsp vanilla extract
Preparation

In a blender, puree peaches and lime juice until smooth. Set aside.
Wipe the inside of a medium bowl with juiced lime half. Add egg whites and 1/2 the sugar. Whip to soft peaks over a double boiler then set aside to cool.
Combine egg yolks and remaining sugar in a separate bowl. Place over a double boiler and whip until pale and fluffy. Add to pureed peaches and set aside to cool. Once cool, fold in cooled egg whites. Whip heavy cream and vanilla in large mixing bowl to soft peaks then fold in along with lime zest. Spoon into a freezer-proof container, cover and freeze overnight.
To serve, remove semifreddo from freezer and let soften slightly. Scoop into balls. Serve immediately.
