Swedish Meatballs - cooking recipe

Ingredients
    2 tbsp oil
    1/2 None small onion, finely chopped
    1 lb ground pork
    3.5 oz mashed potatoes
    1/3 cup heavy cream
    2 tbsp breadcrumbs
    1 None egg
    1 tbsp fresh flat-leaf parsley, chopped
    2 tbsp unsalted butter
    None None cranberry sauce, to serve
Preparation
    Heat 1 tbsp oil in a frying pan over medium heat. Saute onion for 2-3 mins, stirring frequently, until tender. Let cool slightly then combine with pork, mashed potatoes, heavy cream, breadcrumbs, egg, parsley and 1 tsp salt. Season. Roll into 8 meatballs and chill for 1 hour.
    Heat butter and remaining oil in a frying pan over medium heat. Cook meatballs for 12 mins, until browned and cooked through. Serve with cranberry sauce.
