Mushrooms With Garlic Phyllo Puffs - cooking recipe

Ingredients
    3 cloves garlic, finely chopped
    250 ml cream
    1 tbsp butter
    2-3 tbsp olive oil
    6 stems parsley, chopped
    10 sheets filo pastry, about 30 cm square
    250 g small mushrooms, sliced
    50 g spinach
Preparation
    Place the garlic and cream in a small pan and simmer for 20 minutes, until cream has reduced by half. Season with salt and pepper and allow to cool, stirring occasionally.
    Preheat oven to 350\u00b0F. Melt the butter and puree with 1 tbsp olive oil and parsley. Cut pastry into 3 inch squares, brush each square with parsley butter, place 2 squares on top of each other and place on a parchment lined baking tray. Bake for about 8 minutes until golden brown.
    For the mushrooms, heat 1-2 tbsp oil in a large frying pan and saute the mushrooms for 3-4 minutes. Season with salt and pepper and set aside. Add the mushrooms and the spinach to the cream, mix well then sandwich between 2 squares of pastry. Serve immediately.
