Chicken Quesadillas With Green Tomato Salsa - cooking recipe

Ingredients
    7 oz green tomatoes, finely chopped
    1/2 None medium red onion, finely chopped
    1 None green chili, finely chopped, seeds removed
    2 tbsp fresh cilantro leaves, chopped
    2 cloves garlic, minced
    1/2 tsp cumin
    1 pinch chili powder
    1 1/2 None limes, juiced
    -1 None Quesadillas
    2 None cooked chicken breasts, shredded then chopped
    12 None flour tortillas
    6 oz Cheddar cheese, grated
    None None sour cream, to serve
    None None avocado, sliced, to serve
Preparation
    To make the green tomato salsa, combine tomatoes, onion, chili, cilantro, garlic, spices and lime juice in a food processor and pulse 2-3 times until chopped. Remove 2/3 of salsa from food processor and transfer to a bowl along with chicken. Pulse remaining 1/3 of salsa until liquidy then transfer to a serving bowl.
    Heat a large frying pan over medium-high heat. Oil 1 side of tortillas then place, oiled-side down, in frying pan. Spread 1/6 of the chicken salsa mixture over top then sprinkle with cheese. Place a second tortilla, oiled-side up, on top. Press down firmly with a spatula as it cooks. When the bottom tortilla is golden, carefully flip it over and cook the other side until golden. Set aside, covered to keep warm. Repeat with remaining tortillas, chicken and cheese.
    Cut quesadillas into wedges and serve with green tomato salsa, sour cream and sliced avocado.
