Oatmeal Cookies With Chocolate Filling - cooking recipe

Ingredients
    3 oz butter
    2 1/3 cups oats
    3 tbsp flour
    1 cup sugar
    2 medium eggs
    12 oz dark chocolate for baking
Preparation
    Melt the butter and allow to cool. Mix the oats, flour, sugar, eggs and butter in a mixing bowl with the whisk of an electric hand mixer. Refrigerate the dough for 30 minutes.
    Preheat the oven to 350\u00b0F. Place 9 tsp of of mixture on a baking sheet lined with parchment paper and press them into flat circles, leaving about an inch gap between the dough circles. Repeat the process with the remaining dough either with another baking sheet in the oven at the same time, or one at a time until you have about 44 cookies. If you put a 2nd sheet in to the lower shelf, you will need to move it up when the first sheet is done. Bake for about 10 minutes. Cool on the baking trays for 10 mins then leave to cool on a wire rack.
    Melt the chocolate over a pot of boiling water. Coat the bottom of half of the cookies with 1 tbsp of chocolate. Spread smoothly with the back of the spoon. Then put together with the remaining cookie halves and press lightly to make a sandwich. Wipe any extra chocolate from the cookie edges and allow to dry.
