Glazed Pork Cutlets With Celeriac Salad - cooking recipe

Ingredients
    2 tsp honey
    1 tsp Dijon mustard
    1 tbsp olive oil
    4 None pork cutlets
    14 oz baby carrots, trimmed
    None None For the Celeriac Salad
    1 1/4 lbs celeriac, grated
    1/2 cup mayonnaise
    1 clove garlic, crushed
    1/3 cup sour cream
    2 tbsp lemon juice
    2 tbsp fresh flat-leaf parsley, roughly chopped
    2 tsp Dijon mustard
Preparation
    Preheat the grill to high. In a large bowl, whisk honey, mustard and oil and add pork, toss to coat. Grill for 5 mins each side, or until cooked as desired. Cover and rest for 5 mins.
    Meanwhile, boil, steam or microwave carrots until just tender then drain. Cover to keep warm.
    Meanwhile, to make salad, combine ingredients in a medium bowl and toss gently to combine.
    Serve pork with carrots and salad.
