Grilled Steaks With Café De Paris Butter And Fries - cooking recipe

Ingredients
    None None Cafe de Paris Butter
    1 cup softened butter
    2 tsp ketchup
    2 tsp Dijon mustard
    2 tsp baby capers, rinsed, drained
    1/2 None shallot, finely chopped
    2 tbsp coarsely chopped fresh flat-leaf parsley leaves
    1 tbsp finely chopped fresh chives
    1 tsp finely chopped fresh marjoram leaves
    1 clove garlic, minced
    2 None drained anchovy fillets
    2 tsp brandy
    2 tsp madeira
    1/2 tsp Worcestershire sauce
    1/4 tsp sweet paprika
    2 tsp mild curry powder
    1/2 tsp lemon zest
    1/2 tsp orange zest
    1 tsp sea salt flakes
    None None Grilled Steaks with Cafe de Paris Butter and Fries
    18 oz frozen shoestring fries
    6 (8 oz) New York Strip steaks
    2 tbsp olive oil
Preparation
    Combine all ingredients for Cafe de Paris butter in a food processor and process until smooth. Shape into 2 logs, roll in plastic wrap then refrigerate (or freeze) until required. Slice 1 log into 6 pieces and let come to room temperature. Freeze remaining log for another use.
    Cook fries according to directions on package.
    Preheat grill. Coat steaks with oil and season. Grill for 3 mins per side, or until cooked to your liking. Transfer to a plate, cover loosely with foil and let rest for 6 mins.
    Top steaks with butter. Serve with fries.
