Coconut Banana Bread - cooking recipe

1 1/3 cups self-rising flour
1 cup flour
2/3 cup firmly packed brown sugar
3/4 cup flaked coconut
1 cup mashed banana
3 None eggs
2/3 cup vegetable oil
1 tsp coconut extract

Preheat the oven to 350\u00b0F. Grease an 8 x 4-inch loaf pan and line bottom and sides with parchment paper, extending the paper 2 inches over long sides.
Sift flours into a large bowl. Stir in sugar and 1/2 cup of the coconut. Stir in combined banana, eggs, oil and coconut extract until just combined. Spread mixture into prepared pan. Sprinkle remaining 1/4 cup coconut on top, pressing down lightly.
Bake about 1 1/4 hours until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
