Chopped Bacon Salad - cooking recipe
Ingredients

4 slices bacon
1/3 cup extra virgin olive oil
2 tbsp lemon juice
2 tsp dijon mustard
1 clove garlic, minced
2 heads baby romaine, roughly chopped
4 None tomatoes, roughly chopped
1 None large cucumber, roughly chopped
1 None yellow pepper, deseeded, roughly chopped
3 None spring onions, finely sliced
2 1/4 cups alfalfa sprouts, roughly chopped
7 oz feta cheese, crumbled
Preparation

Lightly oil a nonstick frying pan and cook bacon over medium heat for 3-4 mins per side, until crispy. Drain on paper towels then roughly chop. Set aside.
Whisk together olive oil, lemon juice, dijon mustard and garlic. Toss 1/2 of vinaigrette with remaining ingredients and bacon. Serve.
