Fava Bean Pasta Salad - cooking recipe

Ingredients
    2 1/4 lb fresh fava beans, shelled
    9 oz orzo pasta
    1 tbsp olive oil
    3 None spring onions, thinly sliced
    2 cloves garlic, thinly sliced
    2/3 cup fresh mint leaves, roughly chopped
    1/4 cup lemon juice
    18 oz cherry tomatoes, halved
    1 tbsp brown sugar
    3 oz Parmesan cheese, shaved
Preparation
    Boil, steam or microwave fava beans until just tender. Drain. Rinse under cold water until cool then drain. Peel skin.
    Cook orzo in boiling salted water until al dente. Drain.
    Meanwhile, heat oil in a large frying pan over medium heat. Cook onions and garlic, stirring, until onion softens. Add pasta, fava beans, mint and lemon juice. Stir until combined. Transfer to large serving platter.
    Add tomatoes and sugar to frying pan. Cook, stirring occasionally, for 5 mins, or until tomatoes just soften. Arrange on salad then sprinkle with cheese.
