Warmed Ricotta With Apricots And Honey - cooking recipe

Ingredients
    3.5 oz amaretti cookies or macaroons
    1 1/2 lbs ricotta cheese (about 3 cups)
    1/2 cup sugar
    1/2 tsp vanilla extract
    2 lbs apricots, halved and stoned, or 2 x 14 oz cans apricot halves in fruit juice, drained
    2 tbsp honey
Preparation
    Preheat broiler to medium. Lightly grease a shallow baking dish and line with a layer of amaretti cookies or macaroons. Beat ricotta, sugar and vanilla together until smooth. Spoon over cookie base.
    Place apricots, round-side up, on top of ricotta mixture and drizzle with honey. Place under broiler for 8-10 minutes, until the apricots are soft and golden. Serve immediately.
