Glazed Pork Tenderloin - cooking recipe

1 None pork tenderloin (about 1 1/4 lbs)
2 tsp olive oil
4 None potatoes, peeled and thinly sliced
1/4 cup balsamic vinegar
1/4 cup maple syrup
1 tbsp chopped fresh oregano
1 clove garlic, crushed
Preparation

Preheat a grill pan on medium heat. Brush the pork tenderloin with olive oil. Sprinkle with freshly ground black pepper. Cook the pork for 7 mins each side, until cooked through. Transfer pork to a serving platter. Cover and let stand for 5 mins.
Meanwhile, spray the potato slices with no stick cooking spray. Cook on grill pan for 5 mins on each side, until crisp and golden.
Whisk the balsamic vinegar, maple syrup, oregano and garlic in a small bowl. Slice the pork and arrange on plates with the potatoes. Drizzle with the balsamic glaze and serve.
