Purple And Red Potato Salad - cooking recipe
Ingredients

1/4 cup olive oil
2 tbsp white or red wine vinegar
2 tsp Dijon mustard
1 None small shallot, sliced
1 lb baby purple potatoes
1 lb baby red potatoes
2 None scallions, chopped
4 None small red radishes, cubed
1/2 cup diced seedless cucumber
1 None medium tomato, diced
1/2 cup cooked chickpeas
1 tbsp chopped fresh parsley leaves
1 tbsp chopped fresh thyme leaves
Preparation

Whisk together olive oil, vinegar, mustard and shallot. Season. Set aside.
Steam potatoes for 10 mins, or until fork tender. Let cool slightly then cut into cubes. Toss with vinaigrette then let cool to room temperature.
Just before serving, add remaining ingredients and toss to combine. Season.
