Almond Fruit Cakes With Mixed Berry Sauce - cooking recipe

Ingredients
    2 oz dried apricots, finely chopped
    2 oz dried pineapple, finely chopped
    2 tbsp sliced almonds
    2 tsp orange zest
    5 tbsp butter, softened
    1/4 cup light brown sugar
    1 None egg, lightly beaten
    1/2 tsp baking powder, sifted
    1/3 cup all-purpose flour
    1 tsp ground ginger
    3.5 oz mixed frozen berries
    1/4 cup orange juice
    1 tbsp granulated sugar
    None None powdered sugar, for dusting
Preparation
    Preheat oven to 350\u00b0F. Grease and line 2 - 8.5 oz ramekins with parchment paper. Combine dried fruit, almonds and orange zest. Set aside.
    Cream butter and brown sugar until light and creamy. Add egg and beat until combined. Mix in fruit mixture, baking powder, flour and ground ginger. Distribute between prepared ramekins and smooth surface. Cover with parchment paper and foil. Bake for 40-45 mins, or until a skewer inserted in the center comes out clean.
    Meanwhile, for the mixed berry sauce, combine 3/4 of the berries with orange juice and sugar. Stir over low heat until sugar dissolves. Simmer for 2-3 mins, or until syrupy. Fold in remaining berries. To serve, drizzle sauce over cakes and dust with powdered sugar.
