Apricot Brown Betty - cooking recipe

Ingredients
    3 None hot cross buns
    3 tbsp butter, melted
    2 tbsp sugar
    1/2 tbsp finely grated lemon peel
    1/2 tsp ground cinnamon
    2 cans (15 oz each) apricots, well drained
Preparation
    Preheat the oven to 350\u00b0F. Break the hot cross buns into large pieces. Place the pieces in a food processor and process to form crumbs. Transfer the crumbs to a large bowl (you should have about 3 cups of crumbs). Stir in the melted butter.
    Combine the sugar, lemon peel and cinnamon in a separate bowl. Spread half the buttered crumbs in a large shallow baking dish (or four 1 1/2-cup baking dishes). Sprinkle with half the sugar mixture, then top with apricots. Sprinkle the apricot layer with the remaining buttered crumbs and sugar mixture.
    Bake for 20-25 mins or until the crumbs are golden. Serve warm with cream or ice cream.
