Ingredients

9 oz dried apricots
3 1/2 cups graham cracker crumbs
1 cup butter, chopped coarsely
3/4 cup firmly packed light brown sugar
1 (14 oz) can sweetened condensed milk
1/4 cup desiccated coconut
Preparation

Grease a 9x13 inch rimmed baking pan and line base and long sides with baking paper, extending paper 2 inches over sides.
Process apricots in a food processor until finely chopped. Transfer to a large bowl along with graham cracker crumbs.
Whisk butter, sugar and condensed milk in a medium saucepan over low heat until butter is melted. Bring to a boil, whisking constantly. Remove from heat and stir into apricot mixture. Transfer to prepared pan and smooth surface. Sprinkle with coconut then let cool.
Chill until firm then cut into squares or bars to serve.
