Apricot And Cinnamon Crêpes - cooking recipe

Ingredients
    1 tbsp unsalted butter
    1 (13.5 oz) can apricot halves in fruit juice, drained, halved, juice reserved
    1 tsp ground cinnamon
    2 tbsp brown sugar
    1 None cinnamon stick, broken
    8 None crepes
    None None creme fraiche, to serve (optional)
Preparation
    Heat butter in a pan. Cook apricot wedges over high heat for 2 mins. Add ground cinnamon and cook for 1 min. Add brown sugar, 5 tbsp reserved juice and broken cinnamon stick. Cook until mixture is hot.
    Fill crepes with most of the apricot mixture then return to pan with remaining filling. Heat for 1 min. Serve with creme fraiche, if desired.
