Mackerel With Tomatoes, Sour Cream And Thyme - cooking recipe

8 tbsp olive oil
4 None fresh mackerel (about 300-350g each), filleted
3 tbsp lemon juice
150 ml creme fraiche
10 sprigs fresh thyme, leaves stripped from 4 sprigs
500 g tomatoes, sliced
1 None medium onion, peeled and cut into thin rings
Preparation

Preheat the oven to 350\u00b0F. Line a roasting pan with parchment paper, drizzle with 3 tbsp oil and sprinkle with a little sea salt and black pepper. Lay the mackerel fillets on top, skin-side down. Drizzle with the lemon juice and 3 tbsp oil and sprinkle with more sea salt and black pepper. Bake for 10 mins.
In a bowl, mix the sour cream with half the thyme leaves. Remove the fish from the oven and arrange the tomatoes and onion rings over the fillets. Spoon over the sour cream and drizzle with 2 tbsp oil. Sprinkle with the remaining thyme leaves and stems. Bake for 10-15 more mins, until the fish is cooked through. Serve with boiled rice.
